The Story
This salad is peak summer vibes! Sweet watermelon, salty feta, fresh mint, and a kick of Aleppo pepper create this incredible flavour combination that's greater than the sum of its parts. It's the kind of thing you make when it's too hot to cook and you just want something refreshing!
I first had this at a friend's backyard BBQ on a scorching January day, and I've been making it every summer since. It's become my signature dish to bring to potlucks because it's so easy, looks gorgeous, and everyone always asks for the recipe!
Serve this alongside grilled meats, or just eat it as a light lunch. Either way, it's summer on a plate!
What You'll Need
- 1/4 seedless watermelon, cubed
- 200g feta cheese, crumbled
- Large handful fresh mint leaves
- 1/4 red onion, thinly sliced
- 2 tbsp olive oil
- Juice of 1 lime
- 1 tsp Aleppo pepper (or chilli flakes)
- Pinch of salt
Let's Make It!
- Cut your watermelon into bite-sized cubes and arrange them on your prettiest serving platter. We eat with our eyes first!
- If your red onion is too sharp, soak the sliced pieces in cold water for 5 minutes, then drain. This mellows them out nicely.
- Scatter the crumbled feta over the watermelon. Don't be shy — the contrast of sweet and salty is what makes this salad sing!
- Tear the mint leaves and sprinkle them over everything. Tearing releases more flavour than chopping!
- Drizzle with olive oil and lime juice. The acid from the lime brightens everything up and balances the sweetness beautifully. Sprinkle with Aleppo pepper and a tiny pinch of salt. Serve immediately and watch it disappear!
