  1. Cut watermelon into bite-sized cubes, removing any seeds. Place in a large serving bowl.
  2. Soak sliced red onion in cold water for 5 minutes to mellow the sharpness. Drain well.
  3. Add feta, drained onion, and torn mint leaves to the watermelon.
  4. Drizzle with olive oil and lime juice. Gently toss to combine.
  5. Sprinkle with Aleppo pepper and a small pinch of salt. Serve immediately while watermelon is still cold and crisp.
