Summer in Australia is hot. Properly hot. The kind of heat where you don't want to cook, don't want to eat anything heavy. You want cold watermelon straight from the fridge, sweet and crisp. Someone somewhere figured out it goes brilliantly with salty feta cheese — sweet and salt together, mint for freshness, a squeeze of lime. Takes ten minutes to throw together. You serve it at barbecues, Christmas lunch, any time the temperature's pushing forty and you need something light and bright. This is summer on a plate.

  1. Cut watermelon into bite-sized chunks and place in a large serving bowl.
  2. Slice the red onion as thinly as you can. If it's too sharp, soak the slices in cold water for 5 minutes, then drain.
  3. Add the onion to the watermelon along with crumbled feta and torn mint leaves.
  4. Drizzle with olive oil and lime juice. Sprinkle with Aleppo pepper and a pinch of salt.
  5. Toss gently to combine, being careful not to break up the watermelon too much.
  6. Serve immediately while the watermelon is cold and crisp.
