Follow these steps in active cooking mode
Make the salsa: Combine diced tomatoes, red onion, coriander, juice of 1 lime, salt, and pepper in a bowl. Set aside.
Make the guacamole: Mash the avocados with a fork, then mix in juice of 1 lime, a pinch of salt, and chopped coriander. Taste and adjust seasoning.
Heat a large frying pan over medium-high heat. Add the diced onion and cook until soft and translucent.
⏱ 4-5 minutesAdd the garlic and cook for 1 minute until fragrant. Don't let it burn.
⏱ 1 minuteAdd the beef mince, breaking it up with your spoon. Cook until browned all over, breaking up any large chunks.
⏱ 6-8 minutesAdd cumin, paprika, and chilli powder. Stir to coat the meat evenly with the spices. Let the spices toast for 1 minute.
⏱ 1 minutePour in the stock or water. Simmer until the liquid has mostly evaporated and the mixture has thickened. Season with salt and pepper.
⏱ 3-4 minutesWarm the tortillas in a dry pan for 30 seconds per side, or wrap in foil and heat in the oven. Serve the beef with all the toppings and let everyone build their own tacos.
