Ingredients

  • 500g beef mince
  • 1 onion, finely diced
  • 3 garlic cloves, minced
  • 2 tsp ground cumin
  • 2 tsp smoked paprika
  • 1 tsp chilli powder (adjust to taste)
  • 1/2 cup beef stock or water
  • 8-12 small flour or corn tortillas
  • 2 ripe avocados (for guacamole)
  • 3 tomatoes, diced (for salsa)
  • 1/2 red onion, finely diced (for salsa)
  • Fresh coriander, chopped
  • 2 limes, cut into wedges
  • Sour cream, grated cheese, lettuce (optional toppings)
  • Salt and pepper

Cooking Steps

Follow these steps in active cooking mode

Make the salsa: Combine diced tomatoes, red onion, coriander, juice of 1 lime, salt, and pepper in a bowl. Set aside.

Make the guacamole: Mash the avocados with a fork, then mix in juice of 1 lime, a pinch of salt, and chopped coriander. Taste and adjust seasoning.

Heat a large frying pan over medium-high heat. Add the diced onion and cook until soft and translucent.

Add the garlic and cook for 1 minute until fragrant. Don't let it burn.

Add the beef mince, breaking it up with your spoon. Cook until browned all over, breaking up any large chunks.

Add cumin, paprika, and chilli powder. Stir to coat the meat evenly with the spices. Let the spices toast for 1 minute.

Pour in the stock or water. Simmer until the liquid has mostly evaporated and the mixture has thickened. Season with salt and pepper.

Warm the tortillas in a dry pan for 30 seconds per side, or wrap in foil and heat in the oven. Serve the beef with all the toppings and let everyone build their own tacos.
