  1. Bring a large pot of salted water to boil. Cook spaghetti according to package directions until al dente.
  2. While pasta cooks, heat olive oil in a large pan over medium-low heat.
  3. Add sliced garlic and cook gently for 2-3 minutes until fragrant and just starting to turn golden. Don't let it burn.
  4. Add chilli flakes and cook for 30 seconds.
  5. Reserve 1/2 cup pasta water, then drain pasta.
  6. Add pasta directly to the garlic oil. Toss well, adding pasta water a little at a time until sauce coats the spaghetti beautifully.
  7. Toss with parsley and parmesan. Serve immediately in a warm bowl.
